Technical Notes
Vinification
The grapes rich in sugars and primary aromas are gently pressed; then the first press wine undergoes fermentation at controlled temperature from 18 - 20°C. After a settling period, the wine is transferred to small casks of French oak where it is left to develop for 12-15 months.
Soil
Mainly loose with excellent chalky component.
