Neither too alcoholic or too dry nor too sweet. The castellare Vinsanto is a perfect balance.
Made with a strict respect for tradition, with the Malvasia Bianca bunches and a few Trebbiano are hung up to wither inside a ventilated room (the vinsantaia).


Grappa di Sangioveto

The secret of great grappas comes from the quality of marcs and the quickness of distillation procedures. In this case grapes preserve each aroma and all the softness of great grapes. 
Castellare's Grappa is made with the marcs of Sangioveto, which are immediately sacked and vinified in 36 hours. The result is a distillate of fantastic pureness and quality.
