TECHNICAL NOTES

Site

Mission Estate’s Cable Station Road vineyard, in the Awatere Valley, possesses special soils that are comprised of sandy loams with a proportion of clay particles that lie over a gravel subsoil. They are soils that naturally give good vine health but restricted vigour due to these stoney sub soils. The crop loads were low for Marlborough in general in 2014 averaging about 12 tonnes per hectare. The fruit developed intense flavours after the good summer. The harvest started very early April and was completed before the 7th of April before the rains started. Fruit was ripe with terrific flavours and in perfect health.

Vinification

Grapes were crushed and pressed with minimal skin contact. Yeast strains specifically developed for Sauvignon Blanc were used to conduct the fermentation. The one we have predominantly used has good characteristics, giving fine aroma and fullness in the mouth, especially after ageing on lees. Fermentation temperature was 17oC. To achieve ideal balance and to avoid chemical de-acidification, 33% of the wine has undergone MLF. This is in line with our policy of minimal intervention in the winemaking; we wish to make natural wines with little or no residues from viticultural or winemaking inputs. Wine is left on lees for over 5 months to improve flavour and finish.

Hawkes Bay Pinot Gris

The wine displays primary fruit characters typical with Pinot Gris, reminiscent of pear and apple. Our wine has citrus overtones that typify white wines from Church Road and Ohiti Road. The palate is soft and approachable with an appealing fresh acidity that makes this wine ideal for current consumption. It shows good intensity and richness with a full round mouth feel. The palate will gain intensity and length on the finish with one to two years bottle maturation

TECHNICAL NOTES

Fruit harvested from vineyards on Ohiti Road, Church Road and Middle Road, Patangata was used to make this wine.

Site

The soils on the Church Road are alluvial while those at Patangata are sand and clay over limestone.

Vinification

The fruit was crushed and pressed with minimal skin contact. We fermented the juice in stainless steel tanks, using aromatic yeast strains, at low temperature to retain the full varietal flavour in the fruit. The wine was aged on yeast lees giving optimum balance and mouth feel. It has been bottled with no residual sugar.

Ageing

Made for drinking now but will develop over the next two years.

Hawkes Bay Chardonnay Reserve

This Reserve Chardonnay has been aged in French oak barriques, this stylish chardonnay offers lifted aromas of nectarine, mandarin, nougat and cedar that is creamy and silky with subtle oak infusion.

TECHNICAL NOTES

Site

The fruit for this wine was sourced from vineyards in Hawke's Bay: The Bridge Pa triangle Moteo Pa Road and Ohiti Road. The clones for this wine were predominantly Mendoza and Clone 15. The low crops carried on these clones of around seven tonnes per hectare and the very good summer gave us fruit with perfect maturity and full flavour development at harvest time.

Vinification

The grapes were crushed and pressed to create a style of wine
with low extraction. Hard pressings were excluded from the
blend. The light oak flavours are well integrated and the use of
different yeast strains during fermentation gives extra complexity. After fermentation the wine spent 5 months on the yeast lees to further integrate the oak and add creaminess to the palate. The wine underwent partial malolactic fermentation.

TECHNICAL NOTES

Site

The fruit was sourced from Ohiti Road and the Bridge Pa triangle which are warm inland sites sheltered from sea breezes. Soil types: stony gravels with light silt phases requiring irrigation. The grape canopy during the season was shoot thinned and vertical shoot positioned with leaves plucked around the bunches to achieve ripe flavours.

Vinification

Fruit was crushed to fermenter and inoculated with yeast – the fermentation started after two days and was pumped over once daily. Fermentation – approximately seven days with temperature peaking at 30 °C. Post fermentation maceration of up to 20 days was allowed with no pump-overs. Maturation was in tank to retain primary fruit.

Hawkes Bay Reserve Syrah

Our first ever Reserve Syrah is made from fruit from our Chalk Ridge block, just to the south of Havelock North. It is a steep, north facing amphitheatre that is strewn with fossilised limestone. We have used only the ripest fruit from the top of the hill to craft our Reserve Syrah. A tiny amount of Viognier (2.43%) from the same block was co-fermented with the Syrah to add fragrance and complexity and to help fix the colour. Vintage 2010 was a stunner and the vineyard was in excellent condition at harvest.

Central Otago Reserve Pinot Noir

TECHNICAL NOTES

Site

The fruit was grown on a single vineyard site in the Cromwell basin in the Pisa Range sub region. This vineyard site is naturally devigorating; the soils are gravelly with loess and clay particles of diverse origin. The vines were trained using VSP (vertical shoot positioning) canopy management and cropped at 7 tonnes per hectare. Fruit hand harvested at 24.6 Brix.

Vinification

The fruit was 100% de-stemmed, where it underwent a cold soak period of 5 days. A select yeast was used to begin the fermentation, which took a period of 5 days. During the fermentation, the colour, flavour and tannin were extracted from the fruit twice a day using a combination of gentle pumpovers and sparging. The temperature peaked at 33 degrees at the height of the ferment. The wine was held in contact with the skins for a post maceration period of 15 days, before being pressed to French oak barrels.

Ageing

The wine aged in 100% French oak barrels for 10 months, before a light egg white fining and filtration prior to bottling.
