Valtellina Sassella Le Tense
“Tense” means protected, because in 1600 the vines were guarded all year round to prevent anyone from causing damage to the grapes. “Le Tense” wine is made from 100% Nebbiolo (Chiavennasca) grapes from the sub-zone of Sassella.

TECHNICAL NOTES
Site
These vines are planted in some of the best crus in the Sassella subzone: Minè, Chiesa
Sassella, Grigioni-Cà Binaca. The vines are trained with the arched variant of
the Guyot system (3500 vines/hectare), on poor, stony, shallow soil, tending
towards dryness, at a height of 400-450 metres. 6 tonnes of grapes were
produced per hectare.
Vinification
The bunches, picked by hand between 8 and 10 October, were vinified by the red wine method with temperature-controlled fermentation. The maceration lasted 4 days; in December, after a stay in stainless steel, 80% of the wine was transferred into small once and twice used oak barrels while 20% went into 80 hl Slavonian oak vats. Blended in November, it will be bottled in January.
Ageing
5-7 years in bottles stored horizontally in cool, dark conditions.
